Recipe: Hummus à lá Denise

Hummus is easy, and so satisfying if you have a craving for it (like Mariko did).
I make my hummus by “vibration”*, so I don’t have exact measurements.

Ingredients:
garbanzo beans (also known as chick peas or cecis) — you can use canned or dried ones; the dried ones you will have to soak overnight and then cook about 2 hours until done. 2 cans of beans will yield a good amount.
tahini
lemon juice (you will need a lot of this to make the hummus less thick)
onions
celery
carrot
garlic (don’t be wimpy, use at least 2 cloves)
salt to taste
cumin
coriander
cayenne pepper

Instructions:

  1. finely cut up onion and celery. finely grate the carrot. finely mince the garlic (or use a garlic press)
  2. mash up the garbanzo beans, or puree in a food processor.
  3. add the onions, celery, and carrot and puree.
  4. add the garlic, tahini, and lemon juice
  5. add thethe salt and spices to taste
  6. puree and adjust quantities until you achieve your desired taste and texture.
