Recipe: Biscuits

Okay, here is the the recipe for biscuits, buttermilk or otherwise.

Ingredients:
2 c. flour
2 1/2 t. baking powder
3/4 t. salt
1 T. sugar
4 T. butter (or margarine or vegetable shortening)
(if using buttermilk: 1/2 t. baking soda — do not use if using regular milk)
3/4 c. milk or buttermilk

Instructions:

  1. Preheat oven to 420º F.
  2. Measure and shift together all dry ingredients.
  3. With a pastry blender (or a fork or your fingers), blend in butter until mixture reaches a visual texture of cornmeal.
  4. Create a small well in the middle of the mixture, and then add the buttermilk and mix in. Mix just until the buttermilk holds the mixture together. Do not overmix.
  5. Turn dough onto a floured surface, and turn so that dough is evenly floured and of a consistent texture. Flatten dough to ½ in. thickness.
  6. With a biscuit cutter or a glass rim dipped in flour, cut out biscuits and place on a cookie sheet.
  7. Bake biscuits for 10-12 minutes, or until golden brown.
  8. Serve hot with butter, honey, or jam.

Makes approximately 12 biscuits.
