Okay, here is the the recipe for biscuits, buttermilk or otherwise.
Ingredients:
2 c. flour
2 1/2 t. baking powder
3/4 t. salt
1 T. sugar
4 T. butter (or margarine or vegetable shortening)
(if using buttermilk: 1/2 t. baking soda — do not use if using regular milk)
3/4 c. milk or buttermilk
Instructions:
- Preheat oven to 420º F.
- Measure and shift together all dry ingredients.
- With a pastry blender (or a fork or your fingers), blend in butter until mixture reaches a visual texture of cornmeal.
- Create a small well in the middle of the mixture, and then add the buttermilk and mix in. Mix just until the buttermilk holds the mixture together. Do not overmix.
- Turn dough onto a floured surface, and turn so that dough is evenly floured and of a consistent texture. Flatten dough to ½ in. thickness.
- With a biscuit cutter or a glass rim dipped in flour, cut out biscuits and place on a cookie sheet.
- Bake biscuits for 10-12 minutes, or until golden brown.
- Serve hot with butter, honey, or jam.
